For my Very Berry Oatmeal Muffins, you’ll need:
1 cup flour
1/2 cup rolled oats (do not use “thick cut” oats)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 stick unsalted butter (4 tablespoons), room temperature
1/4 cup sugar, plus extra for sprinkling
1 egg, room temperature
1/2 cup plain yogurt
2 teaspoons freshly squeezed lemon juice
1/4 teaspoon vanilla extract
1/4 teaspoon lemon extract (optional)
1 cup berries of choice, fresh or frozen
