Hi everybody and welcome back! Today we’re cooking a fun and healthy snack with a Valentines theme. These baked red beet chips are a fun healthy snack recipe for kids that you can feel great serving up.

We grabbed these local organic beets from our nearby grocery store (we like to support local and organic whenever possible) and since beets are readily available most of the year they were easy to find.

If you’re interested in knowing beet chips nutrition facts, you’ll be happy to hear that beets are packed with nutrients and antioxidants (I go into them more specifically on my blog) but the best part is that not only are beet chips easy to make yourself, whipping these up at home is a great way to avoid the processed versions that come in a bag at the grocery store. So you’ll feel great knowing that you’re eating clean and supporting local too.

So I just want to be sure to reiterate a few tips to making this beet chips recipe a huge success. Now read closely because these points are key :).

1) Be sure to wash the beets very thoroughly. I like to scrub the outsides to get the dirt off. I love that there is dirt on these because it’s a great reminder that this food comes straight from the ground, but since you won’t be peeling of the skins, you’ll want to make sure they’re nice and clean.

2) Make sure the beet slices are very thin. The thinner they are, the more chip like they will be. We don’t have a mandolin or other slicing tool so we used a knife, but a slicing tool can be helpful to maintain consistency of the slices. If the pieces are too thick, then they won’t bake correctly and you will have a soft, baked beet slice versus a beet chip. That can be tasty too, but since we’re going for beet chips here I figured it was worth mentioning!

3) Watch the beet chips very carefully when they’re baking in the over. I typically bake them for 15-20 minutes, but the timing is critical to make sure they don’t burn. So if they look like they still need some more time after 15 minutes, keep peeking at them every minute until they’ve achieved your desired crispiness. Also, remember when the ends have curled up and they’re lightly browned, that a good indication that they’re done. They’ll get crispier once you set them out to cool.
